Server Location
Does Server Location affect your rankings within google at all? For instance If i hosted sites for the UK and they were hosted in the US then will it affect there rankings within google UK?

I was prompted once to switch to the India server and ignored that. If that does give better speeds I would love to switch to the Indian server. Any idea how I could initiate that myself ?

Usually most of the reliable hosting provider have a servers at US for better hosting performance. However, region based hosting may attract the regional users or search engine to the website if the speed of the hosting provider is good.
